  • 1 kg fresh green beans (2.2 lb), trimmed
  • 15 cocktail tomatoes, halved
  • 4 medium onions, diced
  • 2 teaspoons salt
  • 2 teaspoons granulated sugar
  • 1/2 cup (120 ml) water
  • 1/2 cup (120 ml) extra-virgin olive oil
  • 4-5 garlic cloves, peeled and left whole

Directions

1. Trim the green beans, peel the garlic, dice the onions, and halve the tomatoes.

2. Heat the olive oil in a pot and soften the onions lightly.

3. Add the beans, cover, and cook over medium heat, stirring occasionally, until their color shifts from bright green toward yellow-green.

4. Arrange the tomatoes over the beans and add the garlic, salt, sugar, and water.
