Flour Halva

Have these measured and ready before you begin.

  • 250 g (8.8 oz; about 17 1/2 tablespoons) butter
  • 3 tablespoons plus 1 teaspoon (50 ml) olive oil
  • 2 1/2 cups (600 ml by volume) all-purpose flour
  • 1 1/4 cups (300 ml by volume) granulated sugar
  • 1 1/4 cups (300 ml) water

Directions

1. Combine the sugar and measured water in a saucepan and warm, stirring, until the sugar dissolves; keep warm.

2. Heat the olive oil in a wide pan, add the butter, and melt it over low heat until the foam subsides.

3. Add the flour and stir continuously with a wooden spoon over low heat until fragrant and deeply golden.

4. Remove the deeply toasted flour from the heat.

5. Slowly add the warm syrup while stirring and standing back from steam; return to low heat and stir until the halva comes together. Cover and rest 10 minutes.

6. Shape into balls or spoon onto plates and serve.
