Tiramisu
Have these measured and ready before you begin.
- 20 ladyfinger cookies
- 3 cups (720 ml) whole milk
- 1 egg
- 3 level tablespoons all-purpose flour
- 1 teaspoon vanilla extract or 5 g vanilla sugar
- 7.1 oz (200 g) labneh; use full-fat cream cheese loosened until smooth if labneh is unavailable
- about 3/4 U.S. cup plus 1 tablespoon (200 ml) lukewarm water
- 2 teaspoons (10 ml) coffee
- 4 tablespoons sugar, divided
- 2 tablespoons unsweetened cocoa powder
Directions
1. Whisk the milk, egg, flour, vanilla, and 3 tablespoons of the sugar in a saucepan until smooth.
2. Cook over medium heat while stirring constantly until the mixture becomes a thick custard, then remove it from the heat and let it cool until lukewarm.
3. Beat the labne into the lukewarm custard until completely smooth.
4. Dissolve the coffee and remaining tablespoon sugar in the lukewarm water.
5. Dip the ladyfingers briefly in the coffee mixture and arrange one layer in a large dish; spread over half the custard, then repeat both layers.
6. Dust with cocoa and refrigerate for at least 6 hours, preferably overnight, before slicing.
