Pastry

- 3 1/3 cups (800 ml by volume) all-purpose flour
- 125 g (4.4 oz; about 9 tbsp) butter, softened
- 3 tablespoons plus 1 teaspoon (50 ml) neutral oil
- scant 1/2 cup (100 ml) milk
- scant 1/3 cup (70 ml by volume) granulated sugar
- 2 large eggs
- 1 1/4 teaspoons (5 g) baking powder
- 1 teaspoon vanilla extract or 5 g vanilla sugar
Apple Filling
- 5 apples, grated
- 1/2 cup (100 g) granulated sugar
- 2 teaspoons ground cinnamon
Directions
1. Cook the grated apples, sugar, and cinnamon over medium heat for 10–15 minutes, until the juices evaporate; cool completely.
2. Mix the eggs, softened butter, sugar, oil, and milk. Gradually knead in the flour combined with the vanilla and baking powder until a soft, earlobe-like dough forms.
3. Cover and refrigerate the dough for 30 minutes. Divide it into one larger and one smaller piece.
4. Roll the larger piece on a lightly floured surface and fit it into a tart pan. Spread the apple filling evenly over it.
5. Roll the smaller piece, cut it into strips, and arrange them in a lattice over the filling.
6. Bake at 355°F (180°C) for 30–35 minutes, until golden. Cool completely before slicing.
