Chocolate Pudding

Have these measured and ready before you begin.

  • 1 liter milk (about 4 1/4 U.S. cups)
  • 3 tablespoons unsweetened cocoa powder
  • 1/3 cup (40 g) all-purpose flour
  • 8 tablespoons granulated sugar
  • 1 egg yolk
  • 1 tablespoon butter
  • 4 ounces (115 g) dark chocolate, chopped
  • 1 teaspoon vanilla extract or 5 g vanilla sugar
  • about 3/4 U.S. cup plus 1 tablespoon (200 ml) cold water
  • 1/4 teaspoon fine salt

Directions

1. Whisk the milk, cocoa, flour, sugar, and egg yolk together in a saucepan until smooth.

2. Cook over medium heat, stirring constantly, until thick and the raw-flour aroma is gone.

3. Remove from the heat and stir in the butter, chopped dark chocolate, and vanilla until smooth.

4. Stir in the cold water last, while the pudding is still hot.

5. Divide among serving bowls, cool to room temperature, then refrigerate until cold before serving.
