Piyaz

Have these measured and ready before you begin.

  • 3/4 cup plus 1 tablespoon (200 ml by volume) dried white beans
  • 2 medium red onions
  • 1 cup loosely packed flat-leaf parsley leaves
  • 1/4 lemon
  • 3 tablespoons vinegar
  • 1 teaspoon fine salt, plus more to taste
  • 2 teaspoons ground sumac (a tart red Middle Eastern spice; add extra lemon zest if unavailable)
  • 1 teaspoon ground black pepper
  • 4 tablespoons olive oil
  • 1 hard-boiled egg

Directions

1. Soak the dried beans in water overnight; skip soaking and boiling if using already-cooked beans.

2. Drain and rinse the soaked beans, place them in a pot, and cover with water by about 2 inches. Simmer for 35–40 minutes, checking often, until tender but not falling apart.

3. Drain the beans, cool them, and place them in a deep serving bowl with the parsley leaves.

4. Slice the red onions into thin half-moons and add them to the bowl.

5. Squeeze in the lemon juice, then add the vinegar, salt, sumac, black pepper, and olive oil; toss well.

6. Top with the hard-boiled egg and serve cool or warm.
