Ingredients
Measure these ingredients for the full recipe yield.
- 1 cup (165 g) fresh pineapple chunks, chilled
- 3/4 cup (170 g) plain silken tofu, spooned from its package
- 1/2 medium ripe banana (60 g peeled), broken into pieces
- 1/2 cup (120 ml; 120 g) cold water
Directions
1. Use chilled ingredients. If starting with a whole pineapple, remove the rind, eyes, and tough core before weighing the edible chunks.
2. Pour the water into a blender, then add the silken tofu, banana, and pineapple. Use silken tofu rather than firm pressed tofu for the smoothest result.
3. Secure the lid and blend on low, then high, for 45 to 60 seconds, until creamy. Stop the motor before scraping if needed.
4. Divide evenly between two glasses and serve immediately. Shake or stir if the drink separates while standing.
Ingredient notes
No coffee, tea, or cocoa is added.
