Dough

Have these measured and ready before you begin.

  • about 1 2/3 U.S. cups (400 ml) warm milk
  • about 3/4 cup plus 1 tablespoon (200 ml) warm water
  • 7 g (2 1/4 teaspoons) instant yeast
  • 2 tablespoons semolina
  • about 1/3 cup plus 1 tablespoon (100 ml) neutral oil
  • 2 teaspoons (10 ml) granulated sugar
  • 2 teaspoons (10 ml) salt
  • about 4 1/4-5 U.S. cups (1-1.2 liters by volume) all-purpose flour

Toppings

  • 8 ounces (225 g) thinly sliced sucuk or beef garlic sausage
  • 4 ounces (113 g) sliced beef salami
  • 1 bell pepper, thinly sliced
  • 8 ounces (225 g) sliced mushrooms
  • 4 cups (16 ounces/454 g) shredded low-moisture mozzarella

Tomato Sauce

  • 2 tablespoons tomato paste
  • 3 tablespoons neutral oil
  • 1 teaspoon dried oregano
  • 1/2 cup (120 ml) water

Directions

1. Warm the milk and water, combine 800 ml of the flour with the yeast, baking soda, semolina, sugar, and salt, then knead in the liquids and oil.

2. Add the remaining flour gradually until a soft dough forms; cover and rise for 30-45 minutes.

3. Prepare all toppings before rolling so the dough does not overproof on the pans.

4. Roll the dough about 1/2 cm thick, divide between two parchment-lined sheet pans, and prick with a fork.

5. Mix the tomato paste, oil, oregano, and water; spread over the dough and scatter on a little of the cheese.

6. Preheat the oven to 450°F (230°C). Parbake the sauced crusts for 8–10 minutes, add the sucuk, salami, pepper, and mushrooms, and bake 8–10 minutes more.

7. Add the remaining cheese and bake 3–5 minutes, until melted and the crust is browned underneath.
