Granola

Have these measured and ready before you begin.

  • 500 g (17.6 oz) rolled oats
  • 3 tablespoons coconut oil
  • scant 1/3 cup (70 ml by volume) pumpkin seeds
  • 1 heaping tablespoon ground cinnamon
  • scant 1/3 cup (70 ml by volume) almonds
  • scant 1/3 cup (70 ml by volume) hazelnuts
  • scant 1/3 cup (70 ml by volume) walnuts
  • 3 tablespoons grape molasses (üzüm pekmezi; substitute unsulphured molasses)
  • 2 tablespoons honey

Directions

1. Preheat the oven to 325°F (165°C) and line a rimmed sheet pan with parchment. Melt the coconut oil.

2. Combine the oats, pumpkin seeds, almonds, hazelnuts, walnuts, and cinnamon. Stir in the melted oil, molasses, and honey until evenly coated.

3. Spread in an even layer and bake for 25–30 minutes, stirring once halfway through, until lightly browned and dry at the edges.

4. Cool completely on the pan without stirring for larger clusters.

5. Transfer to an airtight container and store in a cool, dry place for up to 2 weeks.
