Dough

Have these measured and ready before you begin.

  • 1 large egg
  • about 2/3 U.S. cup (150 ml) warm water
  • about 3 tablespoons plus 1 teaspoon (50 ml) warm milk
  • 2 tablespoons granulated sugar
  • 2 teaspoons (10 ml) dry yeast
  • 1 teaspoon salt
  • about 3-3 1/3 U.S. cups (700-800 ml by volume) all-purpose flour
  • 2 1/2 tablespoons butter, at room temperature

Egg Wash and Topping

  • 1 large egg
  • 3 tablespoons water
  • 2 teaspoons (10 ml) sesame seeds

Directions

1. Mix the warm water, warm milk, egg, sugar, salt, and yeast.

2. Pour the liquid into a well in the flour, knead for 5 minutes, add the butter, and knead about 10 minutes more until smooth and nonsticky.

3. Cover and rise for 1-1 1/2 hours.

4. Deflate the dough, divide into 8 pieces, shape into tight rounds, and place on parchment.

5. Cover and proof for 1 hour while preheating the oven to 375°F (190°C).

6. Whisk the egg with water, brush the buns, and sprinkle with sesame.

7. Bake until evenly browned, rotating the pan after 8 minutes, then cool before slicing.
