  • 1/4 cup (60 g) plain yogurt
  • 1 teaspoon fine salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dried oregano

Directions

1. Combine the ground beef, yogurt, salt, black pepper, and oregano in a deep bowl and knead thoroughly for 10 minutes.

2. Place the mixture on plastic wrap, shape it into a tight log, and wrap securely.

3. Chill the log in the freezer for 25 minutes, just until firm enough to slice but not frozen solid.

4. Unwrap and cut the log into very thin slices.

5. Cook the slices in a preheated skillet until browned on both sides and the centers reach 160°F (71°C).
