  • 7 oz (200 g) fully cooked turkey sausage, crumbled
  • 4 large eggs (200 g without shells)
  • 1 1/2 cups (240 g) cooked black beans without salt, drained
  • 4 medium whole-wheat tortillas (240 g total)
  • 1 medium (120 g) red bell pepper, diced
  • 2 medium (240 g) tomatoes, finely chopped
  • 2 tablespoons (30 g) fresh lime juice
  • 1/2 cup (20 g) chopped fresh cilantro
  • 2 teaspoons (9 g) olive oil
  • 1/2 teaspoon (1 g) ground black pepper

Directions

1. Heat the oil in a large skillet over medium heat. Add the red pepper and cook until crisp-tender, about 4 minutes.

2. Add the cooked sausage and black beans; stir until hot. Push the mixture to one side, add the eggs, and scramble until they reach 160°F (71°C).

3. Warm the tortillas according to package directions, then divide the filling among them.

4. Stir the tomatoes, lime juice, and cilantro together for the salsa.

5. Fold in the tortilla sides and roll tightly. Serve warm with the salsa, or cool the burritos completely before wrapping for refrigeration or freezing.
