Ingredients

  • 4 boneless lean pork loin chops (680 g total)
  • 5 cups red potato chunks (600 g)
  • 2 large bunches broccolini, trimmed (500 g)
  • 1 large yellow onion, cut into wedges (180 g)
  • 1/2 cup plain nonfat Greek yogurt (120 g)
  • 1/4 cup fresh lemon juice (60 g)

Directions

1. Heat the oven to 425°F (220°C). Toss the potatoes, broccolini, and onion with half the olive oil, half the garlic, and half the salt; roast for 22 to 28 minutes, turning once.

2. Stir the yogurt, lemon juice, and remaining garlic together. Pat the pork chops dry and season them with the black pepper and remaining salt.

3. Heat the remaining oil in a skillet over medium-high heat. Cook the chops for 4 to 6 minutes per side, depending on thickness, until they reach 145°F (63°C).

4. Rest the chops for 3 minutes, then serve with the roasted vegetables and yogurt-lemon sauce.
