Ingredients

  • 2 2/3 cups (240 g) certified gluten-free old-fashioned rolled oats
  • 2 3/4 cups (680 g) nonfat plain Greek yogurt
  • 1 cup (240 g) cold water
  • about 1 1/2 cups (200 g) fresh blueberries
  • 3 small ripe bananas (300 g peeled), 2 mashed and 1 kept whole for serving
  • 1/2 cup (80 g) dry-roasted unsalted peanuts, processed to a smooth butter
  • 1/4 cup (32 g) chia seeds
  • 1 teaspoon (3 g) ground cinnamon

Directions

1. Whisk the yogurt, water, mashed bananas, peanut butter, chia, and cinnamon in a large bowl until smooth.

2. Fold in the oats and half of the blueberries, making sure no dry pockets remain.

3. Divide among four covered jars and top with the remaining blueberries.

4. Refrigerate for at least 8 hours. Stir thoroughly, then slice the reserved banana over the jars immediately before serving.
