Ingredients

  • 2/3 cup (60 g) certified gluten-free rolled oats
  • 3 pitted Medjool dates (60 g)
  • 2 3/4 ounces (80 g) unflavored whey protein powder
  • 1 1/2 tablespoons (24 g) unsalted almond butter
  • about 1/4 cup (20 g) unsweetened shredded coconut, divided
  • 2 tablespoons (16 g) chia seeds
  • 2 tablespoons (30 g) water
  • 1 teaspoon (3 g) cinnamon

Directions

1. Process the oats until coarsely ground.

2. Add the dates, whey protein, almond butter, chia, water, cinnamon, and two-thirds of the coconut; process until the mixture holds together.

3. Chill for 30 minutes, then roll with clean hands into 12 equal bites.

4. Roll in the remaining coconut and divide into four portions.
