Ingredients

  • 1 1/4 lb lean sirloin steak, cut into strips (560 g)
  • 5 cups broccoli florets (500 g)
  • 3 cups trimmed green beans (300 g)
  • 1 2/3 cups sliced carrots (200 g)

Directions

1. Pat the steak strips dry and season them with half the salt. Heat half the olive oil in a large skillet or wok over high heat.

2. Sear the steak in two uncrowded batches until browned and at least 145°F (63°C); transfer it to a clean plate and rest for 3 minutes.

3. Add the remaining oil, broccoli, green beans, carrots, pepper, and onion. Stir-fry for 6 to 8 minutes, adding 2 tablespoons water if needed, until crisp-tender; stir in the garlic and ginger for 30 seconds.

4. Return the steak, add the lime juice and remaining salt, and toss for 1 minute until hot.
