Soup

Have these measured and ready before you begin.

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 onion, diced
  • about 4 1/4 U.S. cups (1 liter) vegetable stock or water
  • 5 ears fresh corn
  • 1 teaspoon fine salt, plus more to taste
  • 1 teaspoon (5 ml) ground black pepper
  • 1/4 bunch parsley, chopped

Directions

1. Stand each ear of corn upright and cut the kernels from the cob, reserving the cobs.

2. Heat the butter and olive oil in a pot and sauté the onion until softened and lightly colored.

3. Add the stock, corn kernels, reserved cobs, salt, and black pepper and bring to a boil.

4. Cover and simmer for about 15 minutes, until the corn is tender.

5. Remove the cobs and blend the soup until smooth.

6. Cook for 10 minutes more, stir in the parsley, and serve.
