Ingredients

- 3/4 cup (100 g) chopped cucumber with peel, scrubbed
- 2 tablespoons (30 g) freshly squeezed lime juice
- About 8 medium fresh spearmint leaves (2 g), washed
- 1/4 cup (60 ml; 60 g) cold still water
- 1 1/4 cups (300 ml; 300 g) plain unsweetened sparkling water, chilled
- About 3/4 cup small ice cubes (100 g)
Directions
1. Combine the cucumber, lime juice, mint, and cold still water in a blender. Secure the lid.
2. Blend for 30 to 45 seconds until finely blended. Do not strain; small green flecks and some cucumber texture are expected.
3. Divide the ice and blended mixture evenly between two tall glasses. Slowly top each with half of the sparkling water.
4. Stir gently once or twice and serve immediately while bubbly. Do not blend the finished carbonated drink or shake it in a sealed container.
