Creamy Chicken

Have these measured and ready before you begin.

  • 1 pound (454 g) boneless, skinless chicken breast, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 400 g button mushrooms (14 oz), sliced
  • 1 kapya pepper, sliced (substitute 1 red bell pepper)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 cup (240 ml) heavy cream

Directions

1. Heat the olive oil over medium-high and sear the chicken until lightly browned but not fully cooked; transfer to a plate.

2. Add the onion to the skillet and cook until softened.

3. Add the mushrooms and cook until their liquid evaporates.

4. Add the sliced red pepper and sauté until tender-crisp.
