Soup

Have these measured and ready before you begin.

  • 4 carrots, roughly chopped
  • 1 large onion, roughly chopped
  • 1 tablespoon neutral oil
  • 1 tablespoon butter
  • 2 tablespoons all-purpose flour
  • 4 cups (960 ml) low-sodium chicken or vegetable broth
  • 1 teaspoon ground allspice
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground black pepper
  • 2 teaspoons salt
  • 1/2 cup (120 ml) whole milk

To Finish

  • 2 tablespoons chopped fresh dill, optional

Directions

1. Sauté the onion and carrots in the neutral oil for 5 minutes.

2. Add the butter and flour and cook briefly, stirring.

3. Pour in the hot water and simmer until the vegetables are tender.

4. Blend until smooth.

5. Stir in the room-temperature milk, allspice, turmeric, black pepper, and salt, then simmer for 5 minutes while stirring occasionally.

6. Garnish with dill and serve.
