Banana Bread

Have these measured and ready before you begin.

  • 2 large eggs
  • 3 ripe bananas
  • 60 g butter (2.1 oz), melted
  • 60 ml neutral oil (1/4 U.S. cup)
  • 100 g granulated sugar (3.5 oz)
  • 190 g all-purpose flour (6.7 oz)
  • 40 g unsweetened cocoa powder (1.4 oz)
  • 80 g milk chocolate (2.8 oz), chopped
  • 1/2 cup (60 g) coarsely chopped walnuts
  • 5 g baking powder (about 1 1/4 teaspoons)
  • 1/4 teaspoon fine salt

Directions

1. Preheat the oven to 350°F (175°C) and grease a 9-by-5-inch loaf pan.

2. Sift together the flour, baking powder, cocoa, and salt.

3. Mash the bananas, then stir in the eggs, sugar, neutral oil, and melted butter.

4. Fold in the dry ingredients just until combined.

5. Fold in the chopped milk chocolate and walnuts and spread the batter in the pan.

6. Bake for 45-50 minutes, until the center tests done.

7. Cool for at least 30 minutes before slicing.
