Cookie Crust
Have these measured and ready before you begin.
- 5 ounces (140 g) oat or graham-style biscuits
- 5 ounces (140 g) chocolate biscuits
- 100 g butter (3.5 oz), melted
Chocolate Cheesecake Filling
- 200 g cream cheese (7 oz), at room temperature
- 200 g labneh (7 oz; full-fat cream cheese may substitute)
- 2 large eggs
- about 1/3 cup plus 1 tablespoon (100 ml by volume) granulated sugar
- 1 teaspoon vanilla extract or 5 g vanilla sugar
- 2 tablespoons all-purpose flour
- about 3/4 cup plus 1 tablespoon (200 ml) heavy cream
- 180 g dark chocolate (6.3 oz), chopped
To Finish
- 100 g dark chocolate (3.5 oz), chopped
- 3 tablespoons unsweetened cocoa powder
- 1/2 cup (120 ml) heavy cream
Directions
1. Crush both biscuits, mix with the melted butter, and press into a foil-wrapped springform pan with slightly raised edges.
2. Melt the 180 g dark chocolate gently with the cream over a water bath, then cool to room temperature.
3. Beat the cream cheese, labneh, sugar, and vanilla until creamy; add the eggs one at a time.
4. Mix in the cooled chocolate-cream mixture and flour, then pour over the crust and level the top.
5. Bake at 325°F (165°C) for 45–50 minutes, until the edges are set and the center still wobbles gently.
6. Cool to room temperature, then refrigerate until firm.
7. Warm the finishing cream, pour it over the remaining chocolate, stir smooth, spread over the chilled cheesecake, and dust lightly with cocoa.
