Have these measured and ready before you begin.

  • 1 baguette

For Brushing

  • 2 tablespoons milk
  • 1 tablespoon olive oil

Garlic-Herb Topping

  • 3 tablespoons olive oil
  • 5 garlic cloves, grated
  • 2 pinches salt
  • 1 pinch ground black pepper, optional
  • about 1/2 cup (15 g) finely chopped flat-leaf parsley
  • 2 sprigs fresh rosemary, leaves stripped
  • 2 sprigs fresh thyme, leaves stripped
  • 1 2/3 cups (400 ml by volume) grated kaşar (or Monterey Jack or low-moisture mozzarella)

Directions

1. Preheat the oven to 400°F (200°C). Combine the salt, optional black pepper, grated garlic, topping olive oil, parsley, rosemary, and thyme, then stir in the grated kaşar.

2. Halve the baguette crosswise, then split each half lengthwise to make 4 pieces.

3. Whisk the milk with 1 tablespoon olive oil and brush it lightly over the cut surfaces.

4. Divide the garlic-cheese mixture evenly among the bread pieces.

5. Arrange on a sheet pan and bake for about 12 minutes, until the cheese is melted and browned.
