Omelet

Have these measured and ready before you begin.

  • 2 tablespoons all-purpose flour
  • 250 g (8.8 oz) mushrooms, sliced
  • 4 large eggs
  • scant 1/2 cup (100 ml) milk
  • 2 tablespoons olive oil
  • scant 1/2 cup (100 ml by volume) crumbled firm feta
  • scant 1/2 cup (100 ml by volume) grated kaşar (or Monterey Jack or low-moisture mozzarella)
  • 1 red bell pepper, diced
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon baking powder

For Cooking

  • 2 tablespoons butter

Directions

1. Preheat the oven to 350°F (175°C). Beat the eggs until foamy.

2. Whisk in the milk, flour, baking powder, olive oil, and black pepper, then fold in both cheeses.

3. Cover and refrigerate the egg mixture for 10 minutes.

4. Melt the butter in a 10-inch oven-safe skillet. Cook the mushrooms over medium-high heat until their liquid evaporates, then add the bell pepper and cook until tender; season with salt.

5. Pour the egg mixture into the skillet and bake for 15–20 minutes, until browned and set.

6. Slice and serve.
