Have these measured and ready before you begin.

  • 3 tablespoons tomato paste
  • 3 tablespoons biber salçası (mild or hot red pepper paste; substitute roasted red pepper paste)
  • about 1 1/4 U.S. cups (300 ml by volume) finely ground walnuts
  • 4 tablespoons olive oil, plus more for the jar
  • 4 tablespoons breadcrumbs, or soft crumbs from stale bread
  • 6 garlic cloves, finely grated or crushed
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon Aleppo-style red pepper flakes
  • 1 tablespoon olive oil, for sealing the jar

Directions

1. Place the finely chopped or ground walnuts in a bowl.

2. Add the tomato paste, pepper paste, garlic, olive oil, breadcrumbs, black pepper, cumin, and red pepper flakes.

3. Stir thoroughly until the mixture is cohesive and creamy.

4. Transfer to a clean jar, cover the surface with a little olive oil, and refrigerate.
